A real Italian bakery where the bread is made right before your eyes. Flour ground with rollers and natural stones in the small Mulino Marino mill of Piedmont, natural yeast and our oven give rise to more than 10 different types of bread every day. All the bread is made using traditional Italian homemade recipes: crispy on the outside, soft on the inside and long-lasting.
FRESH PASTA LAB
Every day our pasta makers turn simple ingredients like water, flour and eggs into elaborately shaped pasta that is inspired by the rich traditions of each region of Italy: from stuffed pasta like ravioli and tortellini, to soft gnocchi (potato dumplings), up to delicious tagliatelle (noodles). Everyone can find their favourite type and shape.
Every morning in the cheese laboratory our cheese-makers produce fresh mozzarella according to the artisanal process of Italian tradition, using only raw milk. This milk is more difficult to work with compared to pasteurised milk, but its unique for its yield and flavour. You can try the mozzarella (and some of its “relatives” like ricotta, primo sale, burrata and stracciatella) at the store or take it home.
